For a sophisticated start to an elaborate meal, try this simple salad of sweet canned peaches, mozzarella cubes, aromatic leaves of basil tossed with crispy lettuce. Peaches and lettuce blend well as salad mates. Fresh seasonal fruits like oranges, mangoes, pears can also be used. Crispy greens with a dressing of a good olive oil made tart with fresh lemon juice is the basis for most delicious salads

2 cups iceberg lettuce , cos lettuce , torn into pieces
1 cup peach cubes (canned)
1/2 cup mozzarella cheese cubes
10 to 15 fresh basil leaves , torn into pieces
1 to 2 Herbed Pizza Strips , cut into pieces (optional)
To be mixed into a dressing2 tbsp olive oil
1 tbsp lemon juice
salt and freshly ground pepper to taste
Method
Tips
- Mix all the ingredients for the salad except the dressing in a serving bowl. Keep refrigerated.
- Just before serving, add the dressing to the salad and toss well.
- Serve chilled.
Tips
- To keep the lettuce crisp, soak it in iced water for 10 to 15 minutes and then drain it thoroughly before using in the salad.
- Drain out all the syrup from the peach halves before using them for the salad.
